White Cucumber Salad - Recipe

     Here is a cucumber salad made with white cucumbers.  Instead of their skins being green, they are white.  They taste the same but have a different look, and these skins seemed slightly thinner and more delicate than their green skinned counterparts.  This recipe works perfectly fine with green cucumbers too if there are no white ones available.  Here I use a white balsamic vinegar which is simply divine.  It is inherently sweet due to the type of grape used and no additional sugar is needed.  This recipe is easy, fresh tasting, and the crispy cucumbers and onions are refreshing.  It is also a good dish to make a day ahead to save you time if you are entertaining.

White Cucumber Salad

(Makes 6 Cups)

2 lbs. White Cucumbers (waxless, preferable organic) sliced
1 Onion sliced
1 T. Coarse Celtic Sea Salt
1/2 c. White Balsamic Vinegar (I use Taste of Old Country White Balsamic Vinegar)
1/4 tsp. White Pepper
1/4 c. Water

Mix the cucumbers, onion, and salt in a large mixing bowl.  In another bowl mix the vinegar, white pepper, and water together.  Add the liquid mixture to the cucumbers and toss together.  Cover and refrigerate for 1 hour.
