Gremolata - Recipe
Gremolata is a chopped herb condiment, usually made with lemon zest, garlic, and parsley. Different citrus zests can be used such as lime or orange. Also, you may try other herbs for a variation. Here I used orange zest instead of lemon zest and cilantro instead of parsley. It is great with lamb, beef, and pork. It is also good on vegetables like the braised veggies in osso buco.
When I first tried gremolata it seemed very strong and bitter. I did not care for it on its own. But I persevered and sprinkled it on top of my osso buco. What ensued was pure magic in my mouth! It made the rich dish come alive, get up and dance! Everything came into balance, and now I understand.

Gremolata
(Makes 1/2 cup)
1/2 - 3/4 c. Cilantro finely chopped (measure after chopping)
1-2 Minced Garlic Cloves to taste
Zest of 1 Orange
