New York Strip Beef Roast - Grass Fed - Recipe

     This week I roasted a grass fed New York Strip Beef Roast from Mill Road Farm at Leesburg Farmer's Market!  Whenever I roast a cut of grass fed beef that does not have lots of fat or connective tissue, I do it a certain way to ensure maximum tenderness and juiciness.  For this petite roast, I roasted at 450 degrees Fahrenheit to get a nice browning on the fat on top, then without opening the oven door I turned the heat down to 225 degrees Fahrenheit and roasted it for 30 more minutes.  Delicious!





New York Strip Beef Roast - Grass Fed

(Serves 4)

2 lb. New York Strip Beef Roast - Grass Fed
Olive Oil
Salt
Pepper

Preheat oven to 450 degrees Fahrenheit.  Rub roast with olive oil, salt, and pepper.  Place in a small roaster fat side up.  Roast in oven for 15 minutes.  Turn heat down to 225 without opening the oven door and roast for 30 more minutes until the internal temperature reaches 145 degrees Fahrenheit.  Rest 15 minutes out of the oven.  Slice into thin slices and serve warm.
