Happy Easter! It has been great at the Farmer's Market in Leesburg, Va this spring! This report is full of beautiful animal and food pics with links to recipes to help you celebrate spring and the Easter season!
Yesterday was especially fun to see the animals that Honey Brook Farms brought for us to enjoy! There were baby chickens, turkeys, and lambs!

In keeping with the celebration of Easter, I was thrilled to see turkey eggs at Harper's Ferry Family Farm! So of course I got some! They are pretty speckled eggs slightly larger than chicken eggs. These had harder shells too, so it took a harder knock to crack them open. I made a special Farmer's Market Frittata with those eggs! Don't panic, you can use chicken eggs too, just use a couple more! Check out the recipe Here! I made the New York Strip Beef Roast before I made the frittata and used some of the leftovers for the egg dish. I roast a grass fed beef roast differently than than a grain fed roast. There is less fat than grain fed and this cut does not have a lot of connective tissue in either type. See how Here!

Another gem that I found at the market was sweet winter cabbage from Shenandoah Seasonal! What a beautiful cabbage to look at and sweet to eat! I made a special dish with this one. Sweet Winter Cabbage and Clam Salad! It is not hard and it makes for an attractive presentation at a lunch or first course! See how Here!
Finally, I smoked the Pork Fish from Dancing Cow Farm I was saving for Easter Dinner in our Big Green Egg! I brined it for 2 days in a salty/sweet/herby brine and then smoked it in the Big Green Egg with cherry chips. The flavor went completely through! Take a look at the recipe Here!
