Black Bean Lamb Chili with Cinnamon and Coriander - Recipe

 

           A chili that is fast to put together and cook. It is made with warm, sweet spices and black beans which I like to serve over spaghetti.




Black Bean Lamb Chili with Cinnamon and Coriander

(Serves 4)

2 T. Olive Oil
1 Onion diced
4 cloves Garlic, peeled and chopped
2 lb. Ground Lamb
1 tsp. Sea Salt
1 1/2 tsp. ground Cinnamon
1 1/2 tsp. ground Coriander
1 (28-oz.) can Crushed Tomatoes
1 (15-oz.) can Black Beans
Salt and Pepper to taste

Sauté onion and garlic in olive oil over medium heat in a 5 quart Dutch oven.  Add ground lamb, salt, cinnamon, and coriander.  Sauté untill meat is lightly browned.  Add tomatoes and beans.  Simmer 30 minutes.  Season to taste and serve over pasta.
