Beet Salad with Pear Balsamic - Recipe

     Here is an unusual way to prepare fresh beets.  It is simple and hassle free!  No cooking, no peeling!  Just scrub the beets well and slice off any stray roots.  I like the beets sliced into thin sticklike shapes marinated in a sweet pear balsamic vinegar.  They come out crunchy and full of flavor!  You can then serve them all kinds of ways.  - As a side dish or in a summer berry salad!


Beet Salad with Pear Balsamic

(Makes 2 cups)

1 bunch medium Beets scrubbed with roots cut off, unpeeled, sliced into 1 inch sticks
1/2 c. White Balsamic Vinegar Infused with Pear
1/2 tsp. Salt

Beets sliced up should measure to about 2 cups.  Toss together the beets, vinegar, and salt in a glass mixing bowl.  Cover and refrigerate overnight to marinate for best results.
