Blackberry Agave Frozen Yogurt - Recipe

     Here is one of my favorite summertime treats,  Blackberry Agave Frozen Yogurt.  You can make this with fresh blackberries or thawed blackberries with juices.  We pick the berries from our bush in the back yard which gives a yield to keep us in berries all year long!




Blackberry Agave Frozen Yogurt

(Makes 5 cups)

3 1/2 c. Plain Goat Yogurt or Plain Cow Yogurt
1/3 c. + 1 T. Organic Raw Blue Agave Nectar
4 c. Blackberries


     Place the yogurt, agave nectar, and blackberries in a food processor.  You may split it into batches depending on the size of your processor.  Pulse until until no large chunks are left.  Make ice cream according to your manufacturers directions.  Transfer the ice cream into an airtight container and store in the freezer.  If using a KitchenAid ice cream attachment, it will produce a soft consistency in about 15 minutes.  You will need to place your ice cream in the freezer in an airtight container for 2 to 4 hours to create a firmer texture.

Note:  The ice cream attachment with my KitchenAid works like a dream.  I keep the freeze bowl in a plastic bag in my freezer, which keeps it clean.  I make the ice cream mixture first, set up the ice cream attachment, then go and get the bowl out of the freezer at the last minute.  That way the bowl is not warming up as it waits for me.
