Chicken Salad - Recipe

     Chicken salad is always better with fresh ingredients added to give it flavor and texture.  The chicken I use is roasted.  I especially like using our roast chicken on the Big Green Egg.  I used Jonagold apples and my new Farmers Market find - garden peach tomatoes!  They are yellow, fuzzy, and have nice concentrated tomato flavor!  I am partial to dill, so I added a healthy portion and served the salad on top of a bed of super greens with more garden peach tomato slices arranged on the side!



Chicken Salad

(Serves 1) (Double for more servings)

3/4 c. Fully Cooked Chicken cut into 1/2 inch pieces
3/4 c. Apple cubed ( Jonagold shown here)
2 Small Tomatoes one sliced and one cubed (Garden Peach Tomatoes shown here)
1/4 c. Mayonnaise
1 Scallion diced
1/2 tsp. Dried Dill
Salt
Pepper
1 handful Super Greens

Combine the chicken, apple, cubed tomato, mayonnaise, scallion, and dill in a bowl.  Mix gently and add more mayonnaise if dry.  Add salt and pepper to taste.  Place the greens on a plate and spoon the salad on top.  Arrange the sliced tomatoes around the edge.
