Swiss Chard Spaghetti Sauce- Recipe
This is a very fresh tasting spaghetti sauce. It has a brightness from the tomatoes and cilantro. The ground beef also picks up a lot of flavor from the bacon grease. So if you have some on hand, it is worth it. When I fried bacon in the morning, I spooned the excess grease into a mug and placed it in the refrigerator to use later in the day.

Swiss Chard Spaghetti Sauce
(Serves 4)
2 T. Bacon Grease saved from frying bacon or Palm Oil
1 Large Onion chopped
4-6 Garlic Cloves peeled and chopped
1 lb. Ground Beef
1 (28 oz.) can Diced Tomatoes
Pinch Cayenne Pepper
6 Swiss Chard Leaves chopped
1 tsp. Cilantro
Salt to taste
Cooked Pasta
Parmesan Cheese
Heat bacon grease in a large Dutch oven on medium heat and add the onion and garlic. Sauté until softened. Add the ground beef and sauté until brown. Add the tomatoes and cayenne pepper, then simmer, covered, for 20 minutes. Then add the Swiss chard and cilantro. Simmer for 10 more minutes, stirring occasionally. Salt to taste. Serve over pasta and garnish with parmesan cheese.
