Raspberry and Golden Beet Salad Dressing - Recipe

     This dressing is berry powerful!  It has a dominant raspberry flavor with body and sweetness from the golden beet.  The pear balsamic vinegar is sweet/tart with a gentle pear flavor.  I paired it with spicy arugula which was wonderfully tamed by the strong sweet raspberries.


Raspberry and Golden Beet Salad Dressing

(Makes 3/4 cup)

1 small golden beet with peel cut into chunks
6 oz. Fresh Raspberries
2 T. White Balsamic Vinegar Infused With Pear
1 T. Olive Oil

In a food processor, puree the beet, raspberries, and vinegar.  Add the olive oil slowly and puree to completely incorporate.
