Rum Pineapple Sauce - Recipe

This is a great recipe to go on roast pork dishes.  It is easy to make too!

Rum Pineapple Sauce
(Yields 5 cups)

1 (20-oz.) can Pineapple Chunks
1 (20-oz.) can Crushed Pineapple
2 T. Corn Starch
2 T. Organic Coconut Palm Sugar
2 T. Rum or more to taste
1/2 tsp. Salt

     Place the pineapple and pineapple chunks in a sauce pan.  Mix the corn starch, palm sugar, rum, and salt in a separate bowl.  Let is sit a few minutes to dissolve the sugar and stir again.  Heat the pineapple on medium heat to a simmer.  Turn off the heat and add the corn starch mixture, stirring quickly.  Turn on the heat to medium low and simmer until thickened, stirring constantly.
