Gruyere and Cheddar Mac and Cheese - Recipe
Gruyere and Cheddar Mac and Cheese. A picture is worth a thousand words.
Gruyere and Cheddar Mac and Cheese
(Serves 8-10)1/4 c. Butter
1/4 c. All Purpose Flour
4 c. Milk, hot but not boiling
1/2 tsp. Sea Salt
Couple Turns Freshly Grated Black Pepper
8 oz. White Raw Sharp Cheddar Cheese preferably grass fed
12 oz. Gruyere Cheese
16 oz. Elbow Macaroni cooked al dente
Preheat oven to 400 degrees Fahrenheit. Melt butter in a 5 quart Dutch oven until it starts to bubble on low heat. Add the flour and whisk for about a minute. Increase heat to medium and slowly whisk in the warm milk. Whisk until the sauce thickens. Add the salt, pepper, and cheese minus 1/2 cup. Whisk until it is melted. Take off of the heat and stir in the macaroni. Sprinkle the 1/2 cup of cheese over the top and place in the oven to bake, uncovered for 25 minutes or until patches of golden brown appear on top.
