Brownies Made with Goat Yogurt
(Makes 15 squares)
1 1/2 c. Semi-Sweet Chocolate Chips (10 oz.)
1 c. Regular All Purpose Flour
1/2 tsp. Salt
1 c. Sugar
1/2 c. Olive Oil
1/4 c. Plain Goat Milk Yogurt
2 T. Water
1 T. Vanilla
2 Eggs
Preheat the oven to 350 degrees Fahrenheit and grease an 8 x 11-3/4 inch enamel lined cast iron roaster or baking dish. Melt the chocolate chips in an enamel lined cast iron sauce pan on low heat or over simmering water in a double boiler, stirring constantly. Set aside to cool till slightly warm. Place the flour, salt, and sugar in a mixing bowl and whisk together. Place the oil, yogurt, water, vanilla, and eggs in a measuring cup. Do not mix them. Add the chocolate and wet ingredients to the dry ingredients at once. Then stir with a spoon just until blended. The batter will have a shiny look to it. Bake for 30 minutes until a cake tester inserted in the center comes out clean. Let the brownies cool in the pan before cutting.
Note: These brownies have a beautiful, shiny, thin crust with a fudge-like interior. -Superb chocolate flavor too! I use my little Le Creuset sauce pan to melt the chocolate because it provides a nice buffer from direct heat and melts faster than my double boiler. Then I use my Le Creuset roasting pan to bake them They come out so easy in this pan. Brownies were one of the first things I ever made. I still love the smell of brownies baking and like eating them even more!
