Roasted Sweet Potatoes - Comfort Food Recipe
Roasting vegetables is easy! The key is in the timing. How long you roast will depend on the vegetable, and how small the pieces are. I confess I do not measure amounts here.
6 Large Sweet Potatoes
Olive Oil
Salt
Preheat oven to 400 degrees Fahrenheit. Scrub the sweet potatoes with a vegetable brush and dry them with a paper towel. I leave the skins on. Cut them in half, then in half again. Continue slicing longways, to the desired thickness. Place them on a cookie sheet or sheets in one layer. Drizzle with a little olive oil and distribute it with your hands making sure everything gets covered. Add more oil if necessary. I don't want them sitting in a pool of oil, but I don't want them dry either. Place the potatoes in the oven and bake until soft and slightly caramelized on one side (check in 30 minutes). Use a fork to test for doneness.
Variations: Sprinkle with Garlic Powder, Thyme, Cayenne Pepper, or Cinnamon
